We specialise in sourcing and supplying whole fish for our customers, who can then process and add value as required. Simpson and Ward can supply fillets and special cuts of fish to order.

Most of our fish are sourced through the two fish markets on the islands; one is situated at Scalloway on the west coast, the other at Lerwick on the east coast. These facilities are among the best in the UK, both being chilled and lined to meet strict hygiene standards. Daily catches are sold through an electronic auction system, which allows the fish to be weighed and graded before sale.
Simpson and Ward buy daily from the auction preferring to source fish from the smaller boats that do shorter fishing trips thus improving quality. Our place in the heart of the North Sea and Atlantic facilitates more frequent landing patterns which of course leads to better quality, fresher fish.
There is a large variety of species landed in Shetland.
Most common are: Haddock, cod, monkfish, saithe (coley), ling, whiting and plaice
Common but with smaller quantities are: Halibut (wild and farmed), megrim, skate, catfish, lythe (pollock), hake, eels, john dory, lemon sole, squid, dogfish, turbot and witches.
Shellfish
We can source quantities of mussels, scallops, crabs and lobster. Please call for availability.
Mackerel and herring are also available in season.
